Gédéon Guinot, initially Herbalist, Liquorist and Viticulturalist, creates the Blanquette de Limoux and creates the House Guinot. He is the first to use the "Champenoise Method": manual riddling and disgorging on the fly to remove the deposit natural in bottles.
